Our lard comes partly from our own pigs, and partly from pigs raised by other small farms in our area. We use a very small, USDA-inspected butcher shop that exclusively serves small family farms like ours, never factory farms or feedlots. Farmers with small operations and just a few animals are able to be more tuned in to the health and wellbeing of their animals, which results in a healthier and higher-quality product. This lard is rendered "dry", meaning there is no additional water used. The butcher shop puts it all in a large copper kettle and heats it, letting any moisture steam off before it is strained and packaged. This leads to a high quality product with a longer shelf life than most. 

Why use lard? Lard is high in monounsaturated fats, which are heart-healthy fats known to help reduce bad cholesterol levels and lower the risk of cardiovascular disease. It also contains vitamin D. Lard from pastured pigs is a good source of vitamin D, which is important for bone health, immune function, and overall well-being. It's stable for high cooking temperatures. Lard has a high smoke point, making it ideal for frying and sautéing without breaking down into harmful compounds, unlike some vegetable oils. No trans fats. Unlike many processed vegetable oils, lard is naturally free from trans fats, which are known to increase the risk of heart disease. Rich in Omega 3 fatty acids (from pastured pigs) When sourced from pigs raised on a natural diet, lard can contain beneficial omega-3 fatty acids, which are essential for brain health and reducing inflammation. It also helps with absorption of nutrients. Fats like lard aid in the absorption of fat-soluble vitamins (A, D, E, and K), which are essential for maintaining good health. It also has anti-inflammatory properties. The presence of oleic acid (a monounsaturated fat) in lard can help reduce inflammation in the body, which may help with conditions like arthritis. The fats in lard can promote healthy skin by providing essential fatty acids that are necessary for maintaining the skin's moisture and elasticity.  Lard, especially from healthy sources, can improve gut health by supporting a balanced microbiome and reducing inflammation in the digestive tract. Lard is a whole food fat that undergoes minimal processing compared to many industrial oils, which can contain artificial additives and preservatives.
